Monday evening, late shift and a walk home in the rain. I didn’t feel exactly like cooking and the discount coupon for the pizza delivery was haunting my mind. But I stayed strong and made a salad, which turned out to be absolutely delicious!
Goat Cheese Salad. Take a slice of bread and cut it into a round shape. Place a generous slice of goat cheese on top of the bread. Drop a little bit of running honey and some thyme on the cheese and the bread. Bake in the oven in 200 degrees until the cheese start to have a golden colour to it. In the mean time, fill the plate with some fresh green salad, fresh spinach, cucumber, tomatoes, champignons, sweet red pepper, carrots, olives, pin seeds and corinth raisins. Finish with some olive oil, balsamic vinegar, freshly ground black pepper and just a hint of herb salt. Place the bread and cheese in the middle and -enjoy.
